Spicy turmeric-ginger pumpkin seeds baked with coconut oil for a flavorful, healing snack.
Ingredients:
  • 2 tablespoons coconut oil, melted, or more to taste
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cayenne pepper, or more to taste
  • 1 teaspoon ground ginger
  • 1 cup raw pumpkin seeds, unwashed
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C) and prepare a baking sheet with parchment paper.
  • Combine coconut oil, turmeric, black pepper, cayenne pepper, and ginger in a small bowl and mix well.
  • Transfer pumpkin seeds to a bowl and generously drizzle with coconut oil mixture. Mix thoroughly to ensure all seeds are coated. Spread the seeds evenly on parchment paper, and pour any leftover oil on top.
  • Bake in the preheated oven for about 15 minutes until lightly golden. Turn off the oven, stir seeds to flip over, and leave them inside as it cools.
