Lemon poppy seed baked donuts for a healthier twist on a classic favorite.
Ingredients:
  • cooking spray
  • 0.5 cup granulated sugar substitute (such as Swerve®)
  • 2 teaspoons lemon zest
  • 1 large egg, at room temperature
  • 2.5 tablespoons unsalted butter, melted
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon lemon extract
  • 0.5 cup almond milk, at room temperature
  • 1.25 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 2 tablespoons poppy seeds
  • 1.25 cups powdered sugar substitute (such as Swerve®)
  • 1 tablespoon almond milk, at room temperature
  • 1 teaspoon lemon zest
  • 0.25 teaspoon vanilla extract
  • 0.125 teaspoon salt
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat 2 donut pans with nonstick cooking spray.
  • Combine the sugar substitute and lemon zest in a bowl, ensuring the zest is fully coated with sugar. Stir in the egg, butter, lemon juice, vanilla, lemon extract, and almond milk until well combined.
  • Sift together flour, baking powder, and salt. Combine with the sugar mixture, then gently fold in poppy seeds. Divide the batter evenly among the donut pans.
  • Bake in the preheated oven for 10-12 minutes until a toothpick inserted into a donut comes out clean. Allow to cool in the pans for 10 minutes, then remove and cool completely.
  • While the donuts are cooling, prepare the icing by combining sugar substitute, lemon juice, almond milk, lemon zest, vanilla, and salt in a bowl. Place a rack over a cookie sheet lined with parchment paper. Dip the donuts into the icing and let them sit on the rack until the glaze sets, for about 2 to 3 minutes.
