Healthy wholemeal muffins made with cottage cheese and honey for a guilt-free treat.
Ingredients:
  • 225.00 gm wholemeal self-raising flour
  • 150.00 gm self-raising flour
  • 200g Cottage Cheese
  • 178.75 gm honey, melted
  • 69.30 gm liquid coconut oil
  • 2 eggs, lightly beaten
  • 8.80 gm vanilla extract
  • 332.50 ml frozen raspberries
Instructions:
  • Preheat your oven to 190C (170C fan-forced) and line a 12-hole, 1/3-cup-capacity muffin pan with paper cases.
  • In a large bowl, blend both flours and create a well in the center. Add cottage cheese, honey, oil, eggs, and vanilla. Gently mix until just combined (the batter will be thick). Carefully fold in the raspberries. Portion the mixture evenly into paper cases.
  • Bake for 20-22 minutes until golden and firm to touch. Let sit in the pan for 5 minutes, then cool on a wire rack. Enjoy warm or chilled.
