Indulge in guilt-free carbonara with spelt spaghetti and zucchini noodles.
Ingredients:
  • 200g dried spelt spaghetti pasta
  • 18.20 gm extra virgin olive oil, plus extra, to drizzle (optional)
  • 200g streaky bacon (organic), chopped
  • 2 garlic cloves, chopped
  • 3 eggs
  • 40.00 ml chopped fresh continental parsley leaves, plus extra, to serve
  • 30g parmesan or pecorino, finely grated (don’t use pre-grated)
  • 250g zucchini noodles
  • 200g carrot noodles
Instructions:
  • Cook the spaghetti in a large saucepan of salted boiling water according to the instructions on the packet. Drain, saving 125ml (1⁄2 cup) of the cooking liquid.
  • Heat oil in a large non-stick frying pan over medium heat. Add bacon and garlic, cook for 4-5 minutes until bacon is golden and crisp, and fat is rendered, stirring occasionally.
  • In a large bowl, combine the eggs, parsley, and half of the cheese while whisking.
  • Mix the zucchini and carrot noodles into the bacon mixture and cook gently for 1 minute until slightly softened. Stir in the pasta and take it off the heat.
  • Slowly incorporate the egg mixture and reserved cooking liquid into the pan, stirring gently until everything is well coated (mixture should be smooth and not lumpy). Season generously. Serve in individual bowls and sprinkle with the rest of the cheese. Add a dash of pepper, garnish with extra parsley, and drizzle with a bit of additional oil if desired.
