Upgrade classic apricot chicken with a healthy twist featuring less fat and more fiber.
Ingredients:
  • 9.20 gm olive oil
  • 300g skinless chicken thigh fillets, fat trimmed, cut into 3cm pieces
  • 1 small onion, halved, thinly sliced
  • 1 stick celery, thinly sliced
  • 1 carrot, peeled, cut into chunks
  • 1 garlic clove, crushed
  • 11.80 gm wholegrain mustard
  • 60ml (1/4 cup) salt reduced chicken style liquid stock
  • 125ml (1/2 cup) apricot nectar
  • 30.00 ml chopped dried apricots
  • 1/2 x 400g can cannellini beans, rinsed, drained
  • Steamed snow peas, to serve
  • Broccolini, to serve
Instructions:
  • Preheat your oven to 170C/150C fan forced. In a flameproof casserole dish, heat half of the oil over high heat. Sear the chicken in two batches for 1-2 minutes per side until golden. Transfer the chicken to a plate.
  • In the same dish, heat the remaining oil over medium heat. Sauté onion, celery, and carrot for 5 minutes until softened. Add garlic and cook for 30 seconds until fragrant. Return chicken to the dish and mix in mustard, stock, apricot nectar, and dried apricots. Bring to a boil, then cover with a lid or foil.
  • Bake for 40 minutes, then add cannellini beans for the final 10 minutes of cooking. Serve with steamed snow peas and broccolini.
