Healthy apricot chicken recipe

Upgrade classic apricot chicken with a healthier twist, packed with flavor and fiber.
Ingredients:
  • 9.20 gm Classic Olive Oil
  • 600g skinless chicken thigh fillets, fat trimmed, cut into 3cm pieces
  • 1 large onion, halved, thinly sliced
  • 2 sticks celery, thinly sliced
  • 2 carrots, peeled, cut into chunks
  • 2 garlic cloves, crushed
  • 23.40 gm wholegrain mustard
  • 125ml (1/2 cup) salt reduced chicken style liquid stock
  • 250ml (1 cup) apricot nectar
  • 35g (1/4 cup) chopped dried apricots
  • 400g can Cannellini Beans, drained, rinsed
  • Steamed snow peas, to serve
  • Broccolini, to serve
Instructions:
  • Preheat the oven to 170C/ 150C fan forced. Heat half of the oil in a large flameproof casserole dish over high heat and sear the chicken in 2 batches for 1-2 minutes per side until golden. Transfer to a plate.
  • In the same dish, warm up the remaining oil over medium heat. Add onion, celery, and carrot. Sauté for 5 minutes until softened. Add garlic and cook for another 30 seconds until fragrant. Return chicken to the dish, then mix in mustard, stock, apricot nectar, and dried apricots. Bring to a boil, then cover with a lid or foil.
  • Bake for 40 minutes, then add cannellini beans for the final 10 minutes of cooking. Serve alongside steamed snow peas and broccolini.
