Affordable and nutritious lentil and rice dish inspired by Middle Eastern flavors. Caramelized onions add sweetness, creating a vegetarian favorite for all. Perfect for vegetarians and vegans with complete protein.
Ingredients:
  • 300g cauliflower, cut into florets
  • 36.40 gm extra virgin olive oil
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 150g (3⁄4 cup) dried brown lentils, rinsed, drained
  • 150g (3⁄4 cup) brown rice
  • 3 brown onions, thinly sliced
  • 150g English spinach, coarsely chopped
  • Fresh lemon juice, to taste
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200C (180C fan forced) and prepare a baking tray by lining it with baking paper.
  • Lay the cauliflower on the baking tray and evenly coat with 2 tsp of oil. Season with 1 tsp of cumin and 1 tsp of coriander, then mix well. Roast for 25 minutes, or until crispy and soft.
  • Cook lentils and rice in boiling water until tender, then drain. Heat remaining oil in a non-stick pan over low heat. Cook onion until golden and caramelised, about 15-20 minutes, stirring occasionally.
  • In a large saucepan over medium heat, heat the remaining oil. Add garlic, remaining cumin, and coriander. Cook for 1 minute until aromatic. Add half the caramelized onion and cook for an additional minute. Mix in the lentil mixture and heat through. Stir in spinach, lemon juice, and transfer to a serving platter. Top with roasted cauliflower and remaining onion. Serve with lemon wedges for squeezing.
