Lean beef mince and minimal oil for a healthier, guilt-free chili con carne.
Ingredients:
  • 9.20 gm olive oil
  • 1 small brown onion, finely chopped
  • 1 celery stick, finely chopped
  • 250g extra lean beef mince
  • 3.75 gm Mexican spice mix
  • 2.50 gm ground cumin
  • 55g (1/4 cup) red lentils
  • 200g canned diced tomatoes
  • 60g chargrilled capsicum strips, drained
  • 200g canned black beans or kidney beans, rinsed, drained
  • 62.50 ml chopped fresh coriander
  • 1 long fresh green chilli, sliced
  • Natural yoghurt, to serve (optional)
Instructions:
  • In a large heavy-based pan over medium-high heat, heat the oil until shimmering. Sauté the onion and celery for 1-2 minutes, then add the mince. Break up any large pieces with a wooden spoon and cook for 4 minutes. Stir in the spice mix and cumin, season generously.
  • Combine lentils and tomato in the pot, then pour in 180ml (3/4 cup) water. Bring to a boil, then simmer uncovered for 10 minutes until lentils are tender and the mixture thickens.
  • Add the capsicum and beans to the mixture and sauté for 1-2 minutes. Mix in half of the coriander and half of the chili. Portion out the chili con carne into serving bowls. Garnish with the rest of the coriander and chili. Serve with yogurt on the side if desired.
