Healthy chocolate peanut bar

Decadent, healthy "Snickers" bars with cacao, dates, peanut butter, and chocolate. Perfect for snacking or dessert.
Ingredients:
  • 33.60 gm coconut oil
  • 2 pitted Medjool dates
  • 50g cacao powder
  • 90g desiccated coconut
  • 240ml rice malt syrup
  • 400g can chickpeas, rinsed, drained
  • 95g peanut butter
  • 2 tsp vanilla bean paste
  • 225g peanuts
  • 40g unsalted butter
  • 200g dark chocolate, chopped
Instructions:
  • Prepare a 20cm square pan by greasing and lining it with baking paper. For the date base, melt 1 tablespoon of coconut oil in a small saucepan over low heat. Add in the dates and stir to warm them through. Transfer this mixture to a food processor along with cacao, desiccated coconut, and 1 tablespoon of rice malt syrup. Blend until well combined. Spread the mixture over the base of the pan and press it firmly using your hands. Refrigerate until ready to use.
  • Clean the food processor thoroughly. Blend chickpeas, peanut butter, vanilla, and 1/4 cup (60ml) rice malt syrup until thick and smooth. Spread the mixture over the date base, using a spoon to even it out. Refrigerate for 1 hour before serving.
  • In a saucepan over low heat, melt and combine peanuts, butter, and remaining 2/3 cup (160ml) rice malt syrup. Allow it to cool slightly, then spread the mixture over the peanut butter filling, pressing gently to create a smooth surface. Place in the freezer for 1 hour to set.
  • Melt chocolate in a heatproof bowl over simmering water, making sure the bowl doesn’t touch the water. Cool slightly, then pour over peanut caramel, tilting to cover completely. Chill until chocolate is set, slice into bars, and serve.
