Try this delicious and nutritious one-pan chicken and beans meal prep recipe for a perfect low-calorie option.
Ingredients:
  • 2.50 gm smoked paprika
  • 1 tsp harissa paste
  • 2 garlic cloves, thinly sliced
  • 21.00 gm fresh lemon juice
  • 4 (about 250g) chicken tenderloins
  • 125g green beans, chopped
  • 400g can no-added-salt cannellini beans, rinsed, drained
  • 1 small zucchini, sliced
  • 50g (1/4 cup) pitted Sicilian green olives, halved
  • 400g can cherry tomatoes
  • 4.60 gm extra virgin olive oil
  • Fresh parsley sprigs, to serve
Instructions:
  • Mix together the paprika, harissa, garlic, and lemon juice in a large sealable glass or plastic container. Add the chicken and toss to coat evenly.
  • Combine the green beans, cannellini beans, zucchini, olives, and tomatoes in a large airtight container.
  • Chill the containers in the freezer for up to 3 months, or until the evening before cooking. Thaw overnight in the refrigerator.
  • 1. Heat oil in a large frying pan until shimmering. 2. Add the chicken from the container and cook for 2 minutes on each side until golden. 3. Add the vegetables from the container and simmer for 10 minutes until tender. 4. Serve the chicken and vegetable mixture on plates and garnish with parsley.
