Crispy egg rolls filled with savory beef, potatoes, and cabbage.
Ingredients:
  • 3 potatoes, cubed
  • 2 pounds ground beef
  • 2 cups chopped cabbage
  • soy sauce to taste
  • 1 quart oil for frying
  • 1 (14 ounce) package egg roll wrappers
Instructions:
  • In a medium saucepan, cover the potatoes with water and bring to a boil. Cook until tender for approximately 15 minutes. Drain after cooking.
  • Brown the ground beef in a large saucepan over medium-high heat until evenly cooked, then drain any excess fat.
  • Combine potatoes, eggs, cabbage, soy sauce, salt, and pepper in the saucepan with the ground beef. Cook over medium heat, stirring occasionally, until eggs are cooked and cabbage is tender, approximately 10 minutes. Transfer the mixture to a medium bowl.
  • Preheat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
  • Take a generous tablespoon of the ground beef and potato mixture and place it in the middle of each egg roll wrapper. Roll the wrapper around the filling, folding the edges in to seal the egg roll.
  • Fry egg rolls in hot oil until they turn golden brown, then transfer to paper towels to drain.
