Hearty Greek lentil soup with potatoes, carrots, tomatoes, and parsley.
Ingredients:
  • 1 cup dry lentils, rinsed and drained
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, chopped, or to taste
  • 1 cup sliced celery
  • 0.5 cup sliced carrots
  • 2 potatoes, peeled and cubed
  • 1 (8 ounce) can crushed tomatoes
  • 0.75 cup chopped fresh parsley
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground cinnamon
Instructions:
  • In a pot, simmer lentils in enough water to cover until tender. Save the flavorful cooking liquid for later use.
  • In a skillet over medium-high heat, saute onion until translucent for about 5 minutes. Stir in garlic and cook for 1 minute. Add celery and carrots, cook until slightly tender for about 5 minutes. Mix in partially cooked lentils, potatoes, tomatoes, parsley, vinegar, cinnamon, salt, and pepper. Cover with water and bring to a boil to make the soup.
  • Lower the heat to a gentle simmer, partially cover the pot, and allow the liquid to reduce until almost evaporated, for 35 to 45 minutes.
