Cozy stew perfect for chilly nights, pair with cheesy or multigrain buns.
Ingredients:
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 1 pound ham steak, cubed
  • 0.5 medium head cabbage, chopped
  • 1 cup water
  • 2 large potatoes, sliced thick
  • 3 carrots, chopped
  • 0.5 teaspoon celery seed
  • 0.5 teaspoon caraway seed
  • 0.5 teaspoon paprika
  • Salt and black pepper to taste
  • 3 cups firmly packed greens, such as spinach, chard or beet tops
Instructions:
  • Heat olive oil in a large pot over medium heat. Sauté onions until tender, about 3 minutes. Add garlic and ham, cook for another 2 minutes. Mix in cabbage and water, cover, and simmer for 10 minutes.
  • Add the potatoes, carrots, celery seed, caraway seed, paprika, salt, and pepper into the pot. Cover and let it simmer for 10 to 12 minutes.
  • Lower the heat to medium low, add the greens, adjust the seasonings to your preference, and simmer for 10 minutes. Enjoy with a side of freshly baked bread.
