Ingredients:
  • 9.20 gm olive oil
  • 1 large brown onion, chopped
  • 2 tsp ground turmeric
  • 1 tsp ground coriander
  • 5.00 gm ground cumin
  • 1250.00 ml chopped vegetables (see note)
  • 765.00 gm vegetable liquid stock
  • 500.00 gm water
  • 415g can chopped tomatoes
  • 400g can chickpeas, drained, rinsed
  • 125.00 ml flat-leaf parsley, chopped
Instructions:
  • In a large saucepan over medium-high heat, heat oil. Sauté onion for 3 minutes, then add spices and hearty vegetables like pumpkin, potatoes, carrots, bell pepper, and celery. Stir well to combine.
  • Combine stock, water, tomatoes, and chickpeas in a pot and bring to a boil. Reduce heat and simmer uncovered for 40 minutes, or until vegetables are soft. Add tender vegetables (beans, broccoli, peas, zucchini) and cook for an additional 5 minutes. Stir in parsley, season with pepper, and serve.
