Hearty vegetarian lentil stew loaded with veggies, perfect for meal prep and sharing all week long!
Ingredients:
  • 5 cups water
  • 1 (16 ounce) package dry lentils, rinsed and drained
  • 1.5 cups dry white wine
  • 3 cups chopped carrots
  • 3 cups chopped celery
  • 2 cups vegetable broth
  • 1 (16 ounce) can diced tomatoes
  • 1.5 cups chopped onion
  • 1.5 cups chopped bell pepper
  • 1.5 cups chopped cabbage
  • 0.5 (8 ounce) can tomato paste
  • 3 tablespoons brown sugar
  • 2 tablespoons curry powder
  • 1.5 tablespoons chopped garlic
  • 1.5 tablespoons onion powder
  • 1.5 tablespoons kosher salt, or to taste
  • 1.5 teaspoons black pepper
  • 1.5 teaspoons ground cumin
Instructions:
  • In a large saucepan, bring water and lentils to a boil. Cover, simmer on low until tender (15-20 mins). Increase heat, pour in wine, let it sizzle for 1 min. Reduce heat to medium-low, cover, simmer for 3 mins.
  • Combine all ingredients in a pot and simmer gently until vegetables are tender and flavors are well blended, about 45 minutes to 1 hour, stirring occasionally.
