Hearty vegetarian stew with butternut squash, potatoes, tomatoes, and garbanzo beans, paired with couscous, yogurt, and fresh herbs for a burst of flavor.
Ingredients:
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 4 medium potatoes, peeled and cut into 2-inch pieces
  • 1 pound butternut squash - peeled, seeded, and cut into 2-inch cubes
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups vegetable broth
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons grated lime zest
  • 1.75 cups water
  • 1 (10 ounce) package dry couscous
  • salt to taste
  • 1 tablespoon salted butter
  • 6 tablespoons chopped fresh cilantro, divided
  • 6 tablespoons chopped fresh mint, divided
  • 6 tablespoons plain yogurt
  • 6 lime wedges
Instructions:
  • In a large saucepan over medium-high heat, warm up some olive oil. Cook the onions and garlic in the fragrant oil until they soften, which usually takes about 5 minutes. Toss in the potatoes, squash, beans, tomatoes with their flavorful juice, vegetable broth, cumin, and coriander. Let the mixture come to a boil, then lower the heat and let it simmer until the squash and potatoes are tender enough to enjoy, typically around 30 to 50 minutes.
  • Just before the stew is done, boil 1 3/4 cups of water in a saucepan. Add couscous, cover, and take off the heat. After 5 minutes, season with salt and stir in butter.
  • Take the stew off the heat and gently mix in lime zest, half of the cilantro, and half of the mint.
  • Plate the stew alongside the couscous and top with a dollop of yogurt. Sprinkle the remaining cilantro and mint over the top and serve with a lime wedge.
