Heavenly Chocolate Mousse Bars

Indulge in luxurious chocolate mousse-filled cookie bars for the ultimate dessert experience.
Ingredients:
  • 1 pouch (1 lb 1.5 oz.) Betty Crocker™ sugar cookie mix
  • Butter and egg called for on cookie mix pouch
  • 1 cup semi-sweet chocolate chips
  • 1 package (8 oz) cream cheese, softened
  • 1 cup whipping cream
  • 1/2 cup whipping cream
Instructions:
  • Prepare the cookie dough according to the package instructions. Press the dough into the bottom of an ungreased 13x9-inch pan and bake at 350°F for 12 to 15 minutes until lightly golden brown. Allow to cool.
  • In a microwave-safe bowl, melt 1 cup of chocolate chips uncovered on High for 1 to 2 minutes. In a medium bowl, use an electric mixer to beat cream cheese until smooth. Mix in the melted chocolate until well combined. Using the electric mixer, beat 1 cup of whipping cream on high speed until stiff peaks form. Gently fold the whipped cream into the chocolate-cream cheese mixture until fully incorporated. Spread the mixture over the cooled cookie base, cover, and refrigerate for 1 hour or until set.
  • Place 1 cup of chocolate chips in a microwave-safe bowl and microwave them uncovered on High for 1 to 2 minutes, stirring every 20 seconds until melted. Whisk or stir in 1/2 cup of whipping cream until well combined. Pour the warm chocolate mixture over the mousse, spreading it evenly. Chill in the refrigerator for 30 minutes or until firm.
