Heirloom tomato salad with goat cheese and creamy buttermilk dressing.
Ingredients:
  • 0.5 cup fat-free mayonnaise
  • 0.25 cup reduced-fat buttermilk
  • 3 tablespoons thinly sliced green onions
  • 1.5 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • kosher salt to taste
  • 6 medium heirloom tomatoes, cored and cut into wedges
  • 0.5 cup thinly sliced onion
  • 1 tablespoon fresh lemon juice
  • kosher salt and freshly ground black pepper to taste
  • 2 ounces crumbled soft goat cheese
Instructions:
  • Combine mayonnaise, buttermilk, green onions, lemon juice, garlic, and salt in a small bowl. Refrigerate until ready to serve if not using immediately.
  • Mix together ripe tomatoes, crisp onion, zesty lemon juice, a pinch of salt, and freshly cracked black pepper in a vibrant bowl to create a refreshing salad.
  • Distribute mixture evenly onto plates, then generously drizzle with dressing and sprinkle with crumbled goat cheese on top.
