Indulge in irresistible pecan slices for your next bake sale!
Ingredients:
  • 250g digestive biscuits, crumbled
  • 125g unsalted butter, chopped
  • 40.00 gm caster sugar
  • 80g slivered almonds
  • 250g dark or milk chocolate bits
  • 150g flaked or shredded coconut, lightly toasted
  • 180g macadamias, halved
  • 395g can sweetened condensed milk
  • 1 tsp vanilla paste or extract
Instructions:
  • Prepare the pan by greasing it and lining the base and sides with baking paper. Create the biscuit base by blending biscuits in a food processor until they become crumbs. Mix in the butter until well combined. Spread the mixture evenly over the base of the pan. Cover with a sheet of baking paper and press down firmly to level and compact using your hands. Remove the baking paper.
  • Preheat the oven to 180C. In a small bowl, combine sugar, a large pinch of salt, and 1 1/2 tablespoons of boiling water. Stir until the sugar dissolves. Mix in the almonds until evenly coated.
  • Sprinkle chocolate chips and coconut evenly over the base. Stir vanilla into condensed milk, then drizzle over the coconut. Arrange macadamia nuts in rows, and place sugar-coated almonds between the rows.
  • Bake for 30 minutes or until golden and firm, covering the top with parchment halfway through. Let cool in the pan.
  • Slice into 24 delectable portions for elegant presentation.
