Elevate your entertaining game with this creamy pine nut-crusted cheese and bagel chip platter.
Ingredients:
  • 250g cream cheese, at room temperature
  • 150g white Castello cheese, coarsely chopped
  • 75g toasted pine nuts, coarsely chopped
  • 20.00 ml finely chopped fresh mint
  • 20.00 ml finely chopped fresh chives
  • Bagel chips, to serve
Instructions:
  • In a medium bowl, use an electric beater to blend the cream cheese and white mold cheese until smooth. Spoon the mixture in the center of a piece of baking paper to form a 5 x 33cm log. Roll the baking paper around the cheese mixture, twisting the ends to seal it. Chill in the fridge for 2 hours until firm.
  • In a bowl, mix together pine nuts, fresh mint, and chives. Spread the nut mixture evenly on a chopping board. Roll the unwrapped cheese log in the nut mixture until coated. Wrap the cheese log in plastic wrap and chill in the fridge for 1 hour until firm.
  • Present the cheese log on a decorative platter alongside bagel chips for a delightful serving option.
