Try these delicious herb and bacon stuffed mushrooms for a quick and tasty entree.
Ingredients:
  • 8 portobello mushrooms
  • 300g fresh ricotta
  • 250.00 ml parmigiano reggiano parmesan cheese, grated
  • 40.00 ml fresh chives, snipped
  • 20.00 ml fresh flat-leaf parsley, chopped
  • 1 tsp fresh thyme leaves
  • 175g (Castlemaine thin and crispy) bacon, rind removed, chopped
Instructions:
  • Preheat the fan-grill to medium heat. Line a baking tray with foil, then place the mushrooms on the tray, skin side down, after cutting off the stems.
  • Combine the creamy ricotta, tangy parmesan, and fragrant herbs. Spoon the mixture into the mushroom caps. Sprinkle generously with chopped crispy bacon. Bake until the bacon turns a beautiful golden hue.
