Ingredients:
  • 400g ricotta cheese
  • 82.50 ml chopped fresh basil leaves
  • 82.50 ml chopped fresh flat-leaf parsley leaves
  • 62.50 ml chopped fresh chives
  • 82.50 ml finely grated parmesan cheese
  • chopped fresh chives, to serve
  • 99.00 gm self-raising flour
  • 2 eggs
  • 128.75 gm milk
Instructions:
  • Prepare the basic batter by sifting flour into a bowl and creating a well in the center. Whisk together milk and eggs in a separate container before adding them to the flour. Mix until smooth, then add ricotta, herbs, and parmesan, stirring until fully combined.
  • In a frying pan over medium heat, heat 1 tablespoon of oil. Scoop 1 heaped tablespoon of mixture for each fritter and cook 6 fritters for 3 minutes on each side until golden and cooked through. Repeat to make a total of 24 fritters. Garnish with chives and serve.
