Sumac and herb-infused butter-braised carrots, a flavorful and effortless side dish.
Ingredients:
  • 1 tablespoon butter
  • 1 pound baby carrots
  • 1 shallot, chopped
  • 2 tablespoons vegetable stock
  • 0.5 teaspoon thyme
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground sumac
  • 0.5 teaspoon chopped fresh rosemary
  • 0.5 teaspoon chopped fresh sage
  • salt and ground white pepper to taste
Instructions:
  • Melt butter in a large pan over medium heat. Add carrots and shallot, stirring until carrots are coated and shallots are slightly softened, about 5 minutes.
  • Combine vegetable stock, fragrant thyme, nutty ground nutmeg, and tangy ground sumac with the carrots. Cover the pan, lower the heat to low, and cook while stirring until most of the liquid evaporates, approximately 15 minutes.
  • Garnish carrots with fragrant rosemary, earthy sage, and a pinch of salt and white pepper off the heat.
