Herb chicken meatballs

Try tasty herby chicken meatballs by MasterChef contestant Daniel Churchill for a family favorite meal.
Ingredients:
  • 500g Chicken Thigh Fillets, coarsely chopped
  • 1 medium fennel bulb, thinly sliced, fronds reserved
  • 3 dill sprigs
  • 3 flat-leaf parsley sprigs
  • 170g teff
  • 5.00 gm ground paprika
  • 500ml chicken stock
  • 1 brown onion, thinly sliced
  • 2 garlic cloves, finely chopped
  • 200g button mushrooms, thinly sliced
  • 1 large fennel, finely shaved
  • 250.00 ml flat-leaf parsley leaves
  • 1 lemon, zested, juiced
Instructions:
  • Finely chop chicken, fennel fronds, dill sprigs, and parsley sprigs in a food processor. Season with salt and pepper.
  • With moistened hands, shape 1 1/2 tablespoon-sized portions of the chicken mixture into balls and place on a plate. Repeat with the rest of the mixture. Chill in the refrigerator for 30 minutes.
  • Mix the teff and paprika in a saucepan. Add half of the stock and 1 cup (250ml) water. Bring to a boil over high heat, then simmer on low for 15-20 mins until the teff is tender.
  • Heat half of the oil in a frying pan over medium-high heat. Cook the meatballs, turning frequently, for 3-5 minutes until they are golden brown. Transfer the meatballs to a plate.
  • Drizzle the remaining oil into the pan. Sauté the onion until golden for 5-8 minutes. Stir in the garlic and cook until fragrant for about 1 minute. Toss in the sliced fennel and mushroom, stirring occasionally, until vegetables are tender for about 5 minutes. Pour in the remaining stock and bring to a boil. Reduce the heat to low, then stir in the teff mixture until combined.
  • Place the meatballs on top of the teff. Cook with the lid on for 15-20 minutes until heated through. Allow it to rest, covered, for 10 minutes before serving.
  • Prepare the shaved fennel salad by mixing fennel, parsley, lemon juice, lemon zest, and olive oil. Garnish the meatballs with a portion of the salad. Serve the remaining salad in a separate bowl alongside the meatballs.
