Herb ricotta with antipasti

Ingredients:
  • 360.00 gm fresh ricotta, drained
  • 40.00 ml chopped flat-leaf parsley
  • 20.00 ml chopped fresh chervil
  • 40.00 ml chopped fresh basil
  • 80ml (1/3 cup) extra virgin olive oil
  • 40ml (2 tbsp) lemon juice
  • 2 eschallots (shallots), finely chopped
  • Oven-baked baguette or grissini (Italian breadsticks), to serve
  • Bought antipasti* (such as marinated artichokes, eggplant, olives and roasted capsicums), to serve
Instructions:
  • Mix all ingredients in a bowl, season to perfection, and transfer to a sealed container for easy transportation.
  • Enjoy with oven-baked baguette slices and antipasti.
