Elevate your meals with this flavorful herb-roasted chicken.
Ingredients:
  • 1.8kg whole chicken
  • 20.00 ml perfect for chicken with lemon, roast garlic & oregano
  • 62.50 ml flat-leaf parsley, chopped, plus extra to serve
  • 2 lemons, quartered
  • 1 red capsicum, quartered, seeded
  • 2 red onion, peeled and quartered
  • 850g frozen Italian herb mini roasts
Instructions:
  • Preheat the oven to 180°C (160°C fan). Season the unwrapped chicken with the herb mix, then place it in a baking dish. Fill the cavity with parsley and half a lemon. Roast for 40 minutes. Add capsicum, onion, and the remaining lemon to the dish. Roast for an additional 40 minutes or until the juices run clear when tested in the thickest part of the leg. Cover loosely with foil and let it rest before serving.
  • Place the potatoes in a single layer on a baking tray and roast according to the instructions on the packet. Finish by sprinkling with parsley and serving with the chicken and pan juices.
