Whip up a timeless herb roast chicken recipe that's perfect for family dinners.
Ingredients:
  • 8 herb sprinkled chicken portions
  • 2 red onions, cut into wedges
  • 2 carrots, thickly sliced
  • 500ml chicken stock
  • 400g couscous
  • Flat-leaf parsley leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200C and generously grease a large baking dish.
  • Arrange the chicken, onion, and carrot in the baking dish. Bake until golden and perfectly cooked, about 40 minutes.
  • Microwave the stock until heated through. Stir in the couscous and spread it around the chicken in the dish. Bake until couscous is tender. Fluff with a fork, garnish with parsley, and serve with lemon wedges.
