Elevate your Sunday roast with this exquisite side dish.
Ingredients:
  • 1 butter lettuce, leaves separated, torn
  • 1 medium avocado, thinly sliced
  • 1 Lebanese cucumber, cut into ribbons
  • 125.00 ml fresh flat-leaf parsley leaves
  • 62.50 ml fresh basil leaves, torn
  • 125.00 ml trimmed snow pea sprouts
  • 65.63 gm lemon juice
  • 36.40 gm extra-virgin olive oil
  • 5.90 gm wholegrain mustard
  • Pinch caster sugar
Instructions:
  • Prepare the dressing by combining lemon juice, oil, mustard, and sugar in a screw-top jar. Season with salt and pepper, then secure the lid and shake well to combine.
  • Combine lettuce, avocado, cucumber, parsley, basil, and sprouts in a bowl. Drizzle with dressing and gently toss to mix. Ready to serve.
