Ingredients:
  • 400 g medium-grain bulgur wheat
  • 1 bunch of spring onions
  • 120 ml extra virgin olive oil
  • 3 lemons
  • 1 large handful of mixed micro herb and salad leaves
  • a few sprigs of fresh thyme
  • 1 pomegranate
  • 1 tablespoon pomegranate molasses
  • ½ teaspoon za’atar
  • 4 tablespoons extra virgin olive oil
Instructions:
  • Place the bulgur wheat in a large bowl and cover it with cold water to soak for at least 1 hour. After soaking, drain the bulgur in a fine colander and transfer it to a serving bowl. Slice the spring onions and add them to the bowl along with oil, lemon juice, sea salt, and black pepper. In a small bowl, combine thyme leaves, pomegranate seeds and juice, and remaining dressing ingredients with some sea salt. Mix the micro leaves with the bulgur wheat, then toss everything together with the dressing before serving.
