Herb-crusted lamb with crisp potatoes

Crispy gremolata-crusted lamb roast - a taste of Italy.
Ingredients:
  • 600g Baby Cream Delight potatoes
  • 27.30 gm olive oil
  • 25g fresh breadcrumbs
  • 40.00 ml chopped fresh continental parsley
  • 2 tsp finely grated lemon rind
  • 1 garlic clove, crushed
  • 1 lamb rack (6 cutlets), French-trimmed
Instructions:
  • Preheat the oven to 200°C. Boil the potatoes until tender, drain, and transfer to a roasting pan. Gently crush them with a potato masher, then drizzle with 1 tablespoon of oil and season with salt. Bake for 15 minutes until golden.
  • In a bowl, mix together the breadcrumbs, parsley, lemon zest, garlic, and the rest of the oil. Season the mixture, then firmly press it onto the lamb.
  • Place the lamb in the roasting pan alongside the potatoes. Roast in the oven for 25-30 minutes until the lamb is cooked to your preference and the potatoes are crispy. Cover the lamb with foil and let it rest for 10 minutes before slicing it in half and serving it with the potatoes.
