Herbal Shrimp Delight with Beer Sauce

Herb and green salad topped with sauteed jumbo shrimp in a flavorful beer-tomato sauce and fresh Parmesan.
Ingredients:
  • 1 cup chopped fresh basil
  • 1 cup chopped fresh oregano
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh spinach
  • 1 cup chopped romaine lettuce
  • 5 tablespoons olive oil, divided
  • 1 teaspoon white wine
  • 2 tablespoons all-purpose flour
  • 0.25 cup cold water
  • 1 small onion, chopped
  • 1 green onion, chopped
  • 5 cloves garlic, peeled and minced
  • 1 cup Mexican beer
  • 1 tablespoon fresh lime juice
  • 1 pound jumbo shrimp, peeled and deveined
  • 2 tablespoons freshly grated Parmesan cheese
  • freshly ground black pepper to taste
Instructions:
  • Combine fresh basil, oregano, parsley, spinach, and romaine lettuce in a bowl with 3 tablespoons of olive oil and white wine.
  • Mix the flour and water in a small bowl until smooth paste forms.
  • In a medium saucepan over medium high heat, saute onion, green onion, and garlic in 1 tablespoon olive oil until tender, about 5 minutes. Add tomato, then stir in flour and water until thickened. Incorporate beer and lime juice, season with salt and pepper, and simmer while preparing shrimp.
  • In a separate medium saucepan, heat the rest of the olive oil. Cook the shrimp for about 3 minutes on each side until they turn opaque.
  • Finely chop the shrimp while warm, then serve them over the herb and greens mixture. Drizzle with beer sauce, and sprinkle with Parmesan and freshly ground black pepper.
