Crispy herbed breadcrumb-coated chicken tenders with a side of tangy Italian tomato dipping sauce.
Ingredients:
  • For the chicken tenders:
  • 2 pounds chicken tenders (about 12 pieces)
  • 1 1/2 cups buttermilk (See Recipe Note)
  • 1 cup breadcrumbs
  • 2 tablespoons Italian seasoning herbs (See Recipe Note)
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • For the tomato dipping sauce:
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup onion, minced
  • 1 clove garlic, chopped
  • 1 tablespoon tomato paste
  • 1 15-ounce can tomato sauce or crushed tomatoes
  • 1 teaspoon sugar
Instructions:
  • Marinate tenders in tangy buttermilk for 15 to 30 minutes as you whip up the savory tomato dipping sauce.
  • Prepare the tomato dipping sauce: In a pot over medium-high heat, sauté onions in olive oil until translucent, for about 3 minutes. Stir in garlic and cook for another minute. Mix in tomato paste and cook for 1 to 2 minutes until it turns a brick-red color. Add tomato sauce or crushed tomatoes, salt, and sugar. Bring to a boil and simmer for 5 minutes with tomato sauce or 10 minutes with crushed tomatoes.
  • Create silky dipping sauce: Place sauce in blender and blend until velvety smooth. Secure lid with your hand, starting at low speed and gradually increasing to high. Refrigerate sauce for freshness up to a week.
  • Preheat oven to 500°F. Line a sheet pan with foil and place an oven-safe metal cooking rack on top. This method ensures the tenders will be extra crispy.
  • Dredge the tenders in a flavorful mixture: Combine breadcrumbs, Italian seasoning, and salt in a shallow bowl. Gently coat each chicken tender in the breadcrumb mixture, ensuring full coverage. Arrange evenly on a wire rack placed inside a sheet pan.
  • Bake the tenders: Drizzle each chicken tender with melted butter and bake in the oven for around 12 minutes, until cooked through and lightly browned.
  • Present the dish alongside a bowl of the sauce for dipping.
