Instant Pot Chicken Cacciatore: Tender chicken thighs, earthy mushrooms, and aromatic herbes de Provence create a rich and flavorful dish.
Ingredients:
  • 4 (6 ounce) bone-in chicken thighs, with skin
  • 1 (4 ounce) package sliced fresh mushrooms
  • 3 stalks celery, chopped
  • 0.5 onion, chopped
  • 1 (14 ounce) can stewed tomatoes
  • 2 tablespoons tomato paste
  • 2 teaspoons herbes de Provence
  • 0.75 cup water
  • 3 cubes chicken bouillon, crumbled
  • 1 pinch red pepper flakes
  • 1 pinch ground black pepper to taste
Instructions:
  • Pat chicken thighs dry with paper towels. Heat oil in an electric pressure cooker on Sauté mode, then brown chicken for about 6 minutes on each side. Transfer chicken to a plate, leaving drippings in the pot.
  • In a pot, sauté mushrooms, celery, and onion until soft for about 5 minutes. Stir in garlic and cook until fragrant for about 2 minutes. Add chicken back to the pot along with tomatoes, tomato paste, and sprinkle with herbes de Provence. Finish by topping with water and bouillon.
  • Secure and seal the lid. Choose high pressure as per manufacturer's guidelines. Allow pressure to build for 10 to 15 minutes. Cook for 11 minutes.
  • Follow the manufacturer's instructions to quick-release the pressure for about 5 minutes. Carefully unlock and remove the lid, turning it away from you. Check the chicken for doneness by using an instant-read thermometer near the bone - it should read 165°F (74°C). Season with red pepper flakes and black pepper to taste.
