Herbed garlic vegetables

Ingredients:
  • 1 red onion, cut into thin wedges
  • 300g orange sweet potato (kumara), peeled, cut into 3cm pieces
  • 1 370g carton chunky roma tomatoes (Edgell brand)
  • 80ml (1/3 cup) water
  • 44.40 gm tomato paste
  • 2 large garlic cloves, crushed
  • 300g broccoli, cut into florets
  • 1 red capsicum, deseeded, cut into 3cm pieces
  • 200g green beans, topped, halved
  • 20.00 ml chopped fresh oregano
  • 1 tsp chopped fresh rosemary
  • 1 large fresh red chilli, finely chopped
  • Salt & ground black pepper, to taste
  • 10 large English spinach leaves, washed, dried, shredded
  • Pan-fried chicken breast fillets, to serve
  • Mashed potato, to serve
Instructions:
  • In a large saucepan over medium heat, sizzle the oil and sauté the onion, stirring occasionally, until softened, about 5 minutes.
  • Combine the sweet potato, tomatoes, water, tomato paste, and garlic in the pot. Simmer over medium-low heat, covered, stirring occasionally for 10 minutes.
  • Add the broccoli, capsicum, beans, oregano, rosemary, chilli, salt, and pepper to the pan. Cook covered, stirring occasionally, for an additional 10 minutes until the vegetables are tender.
  • Add the spinach and gently stir until just wilted, approximately 1 minute. Serve alongside chicken and mashed potatoes.
