Elevate vegetables with flavorful garlic, herbs, and tomatoes.
Ingredients:
  • 1 lb fresh broccoli
  • 2 tablespoons olive or vegetable oil
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 2 plum (Roma) tomatoes, seeded, chopped
Instructions:
  • Prepare broccoli by cutting into small flowerets and 1x1/2-inch stem pieces, totaling 4 cups. In a 10-inch skillet, bring 1 inch of water to a boil. Add broccoli and cook until tender-crisp, about 5 to 7 minutes. Drain and set aside. Wipe and dry skillet with a paper towel.
  • In the same skillet over medium heat, warm the oil and stir in all the remaining ingredients. Cook for about 1 minute, stirring frequently until everything is heated through. Gently toss in the broccoli.
