Flavorful and quick protein-packed quinoa dish cooked with recaíto, orange juice, chickpeas, mint, parsley, and hazelnuts.
Ingredients:
  • 1 tablespoon GOYA® Extra Virgin Olive Oil
  • 2 tablespoons GOYA® Recaito
  • 1 cup GOYA® Organic Quinoa
  • 0.75 cup orange juice
  • 1 (15.5 ounce) can GOYA® Chick Peas, rinsed and drained
  • 0.5 cup mint leaves, chopped
  • 0.5 cup parsley leaves, chopped
  • 0.33333334326744 cup toasted hazelnuts or pistachios, chopped
Instructions:
  • In a pot, mix oil, Recaito, quinoa, orange juice, salt, and 3/4 cup water. Bring to a boil, then cover and simmer over medium-low heat for 20 minutes until quinoa is tender. Stir in chickpeas, then remove from heat and rest for 5 minutes still covered. Finally, add mint, parsley, and hazelnuts.
