Classic herbed roast chicken, perfect for a family feast with vegetables and salad.
Ingredients:
  • 1.5kg whole chicken
  • 1 lemon, halved
  • 2 bay leaves
  • 60g butter, softened
  • 4 large sage leaves, chopped
  • 20.00 ml chopped chives
Instructions:
  • Preheat oven to 180°C. Rinse chicken cavity with cold water, then pat dry inside and out with paper towel. Season generously with salt and pepper for maximum flavor.
  • Squeeze fresh lemon juice over the chicken and tuck lemon halves and bay leaves into the cavity. Carefully create pockets under the skin on both sides of the chicken's breast meat using your fingers.
  • Mix butter with fragrant sage and aromatic chives, then add a pinch of salt and pepper for flavor. Carefully slide the herb butter mixture under the chicken skin. Secure chicken legs with unwaxed string and arrange in a generously greased roasting pan. Loosely cover with foil before cooking.
  • Roast chicken for 30 minutes, then uncover, and brush with pan juices.
  • Roast uncovered, basting occasionally, for an additional 40 minutes until chicken thigh is golden and juices run clear when pierced with a skewer. Remove from oven, cover loosely with foil, let rest for 10 minutes, then serve.
