Indulge in irresistible crispy chicken with flavorful tomato rice for dinner.
Ingredients:
  • 4 chicken thighs, skin on, bone in
  • 18.20 gm olive oil
  • 1 red onion, diced
  • 8 sprigs thyme
  • 62.50 ml flat-leaf parsley leaves, chopped
  • 40.00 ml basil leaves, chopped
  • 400.00 gm white long-grain rice, well rinsed
  • 500.00 ml tomato puree
  • 1020.00 gm chicken style liquid stock
  • steamed vegetables, to serve
Instructions:
  • Preheat oven to 200°C. Season chicken with salt and pepper. Heat oil in a hot deep frying pan. Add chicken, skin side down, and sear for 5-6 minutes until golden. Flip and cook for 3 minutes. Remove to a plate.
  • Sauté onion and thyme in a pan until soft. Stir in parsley, basil, rice, tomato puree, and stock. Bring to a boil, then transfer to an ovenproof dish.
  • Arrange the chicken skin side up on top of the rice, season with salt and pepper, then roast uncovered for 35 minutes or until the rice is tender and the chicken is fully cooked. Serve alongside steamed vegetables for a delicious meal.
