High-fibre Special K pancakes

Fiber-rich Special K pancakes topped with delicious fruit and syrup make a perfect breakfast treat.
Ingredients:
  • 225.00 gm wholemeal self-raising flour
  • 2.00 gm baking powder
  • 53.75 gm caster sugar
  • 250.00 ml Special K original, crushed
  • 386.25 gm reduced-fat milk
  • 1 tsp vanilla bean paste
  • 25g butter, melted
  • 125.00 ml quark (see notes)
  • 3 small bananas, sliced diagonally
  • 125g raspberries
  • 168.75 gm maple syrup
Instructions:
  • In a large bowl, sift together the flour and baking powder. Gently mix in any remaining husks in the sieve. Add sugar and cereal, and stir well. Create a well in the center. In a large jug, combine eggs, milk, and vanilla, and whisk with a fork. Pour the mixture into the well and stir until just combined. Let the batter rest for 10 minutes.
  • 1. Heat a large non-stick frying pan over medium heat and brush it with butter. 2. Pour 1/4 cup of batter for each pancake into the pan and cook for 3 to 4 minutes until bubbles form on the surface. 3. Flip the pancakes and cook for an additional 3 minutes until they are fully cooked. 4. Transfer the pancakes to a plate and cover loosely with foil to keep warm. 5. Repeat the process with the remaining batter, brushing the pan with butter for each batch.
  • Top pancakes with creamy quark, fresh banana slices, juicy raspberries, and a generous drizzle of maple syrup before serving.
