Spicy pork roast appetizer, not cheese, perfect with crackers.
Ingredients:
  • 2 tablespoons vegetable oil
  • 3 pounds pork shoulder, trimmed and cubed
  • 2 cups chopped onion
  • 1 cup chopped green bell pepper
  • 0.5 cup chopped celery
  • 2 tablespoons minced garlic
  • 2 tablespoons dried parsley
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Cajun seasoning
  • 3 cups water or pork stock
  • 3 (.25 ounce) envelopes unflavored gelatin
  • 1 cup boiling water
Instructions:
  • In a 4 quart pot, heat oil over medium-high heat and brown the pork roast on all sides. Lower the heat to medium and stir in onion, bell pepper, celery, and garlic. Season with garlic, parsley, basil, salt, pepper, and Cajun seasoning. Pour in 3 cups of water or pork stock and bring to a boil.
  • Simmer over medium heat, covered, for 2 hours, making sure to stir vigorously every 15 minutes. The pork should be perfectly shredded and have a stringy consistency when it's done.
  • In a separate bowl, dissolve the gelatin in 1 cup of boiling water. Stir the gelatin mixture into the pork mixture until fully combined. Transfer the mixture to a mold or casserole dish, then refrigerate until firm, approximately 8 hours.
  • Unmold the dish by briefly dipping the bottom of the mold in hot tap water for approximately 1 minute, then confidently invert it onto a serving tray. Enjoy with your preferred choice of crackers.
