Festive breakfast casserole with sausage, sweet potatoes, spinach, peppers, and eggs perfect for Christmas morning. Easy to make ahead!
Ingredients:
  • 1 pound sweet potatoes, peeled and cut into 1/2-inch cubes
  • 3 tablespoons extra-virgin olive oil, divided
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground black pepper, divided
  • 0.5 cup diced onion
  • 0.5 cup diced red bell pepper
  • 4 cloves garlic, minced
  • 1 pound bulk regular pork sausage (such as Jimmy Dean®)
  • 1 cup baby spinach leaves
  • 0.5 cup shredded mozzarella cheese
  • 1 tablespoon minced fresh rosemary
  • 10 large eggs
Instructions:
  • Preheat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  • Spread sweet potatoes on a large baking sheet, drizzle with 2 tablespoons olive oil, sprinkle with 1 teaspoon kosher salt, garlic powder, and 1/2 teaspoon black pepper. Toss until evenly coated.
  • Bake in the oven until golden brown, approximately 30 minutes.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sauté onion and red pepper until translucent, about 2 to 3 minutes. Add garlic and cook for an additional minute. Transfer to a medium mixing bowl.
  • In the same skillet over medium-high heat, cook sausage until browned and crumbled, about 5 to 7 minutes. Drain the sausage and combine it with the veggie mixture. Stir in spinach, mozzarella cheese, and rosemary.
  • Whisk eggs, milk, remaining kosher salt, and black pepper until fully combined. Drizzle the mixture over the sausage and vegetables, then gently mix together.
  • Spread the roasted potatoes across the bottom of the baking dish and evenly pour the vegetable and sausage mixture on top.
  • Place the dish in the oven, uncovered, and bake until the center of the eggs is firm, approximately 50 minutes. If the top begins to brown, simply cover the dish loosely with aluminum foil.
