Festive Holiday Granola - Oats, nuts, dried fruit, and warming spices. Perfect for gifting or indulging during the holidays!
Ingredients:
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 5 cups old-fashioned rolled oats (not instant; use gluten-free oats, if needed)
  • 2/3 cup flax seeds
  • 2/3 cup pumpkin seeds
  • 1/2 cup whole almonds
  • 1/2 cup cashews
  • 1/3 cup chia seeds
  • 1 /2 cup dried cranberries
  • 1/2 cup diced dried apricots
Instructions:
  • Preheat the oven to 350F. Line a rimmed baking sheet with parchment paper, leaving about a 1-inch overhang on all sides.
  • Prepare the syrup by combining maple syrup, coconut oil, vanilla, cinnamon, ginger, salt, and cloves in a saucepan over medium heat. Cook and stir occasionally for 2 minutes until the syrup is warm, runny, and the salt dissolves.
  • Combine oats, flax seeds, pumpkin seeds, almonds, cashews, and chia seeds in a large bowl. Drizzle warm syrup over the mixture and stir until fully coated. Spread evenly on a baking sheet.
  • Spread the granola out on a baking sheet and bake at 325°F for 15 minutes. Remove from the oven, stir, and bake for an additional 5 minutes. Repeat, stirring every 3-4 minutes until golden brown (20-25 minutes total). Let cool on the baking sheet.
  • Mix in the cranberries and apricots with the cooled granola until well combined. Transfer to an airtight container and store at room temperature for weeks.
