Gingerbread-Pear Muffins

Holiday spice pear muffins - a sweet and spicy morning delight.
Ingredients:
  • 2 cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 1 cup buttermilk
  • 0.75 cup molasses
  • 0.25 cup vegetable oil
  • 1 pear - peeled, cored, and diced
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing or lining with paper liners.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt. In a separate bowl, beat eggs, then mix in buttermilk, molasses, and vegetable oil until smooth. Gradually stir the buttermilk mixture into the flour mixture until just moistened; gently fold in pears. Spoon batter into muffin cups and bake.
  • Bake in the preheated oven for around 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
