Quick and easy microwave magic pudding - ready in no time!
Ingredients:
  • 60g butter, chopped
  • 169.95 gm milk
  • 225.00 gm self-raising flour
  • 10.00 gm ground ginger
  • 1 tsp ground allspice
  • 180.00 gm dark brown sugar
  • 410g can sliced pears in natural juice, drained well, chopped (see Notes)
  • Icing sugar mixture, to serve
  • Vanilla ice-cream, to serve
  • Golden syrup, extra, to drizzle
  • 6.25 gm cornflour
  • 375.00 gm boiling water
  • 83.75 gm golden syrup
Instructions:
  • Put the butter and milk in a microwave-safe jug. Microwave on HIGH for 1 minute and 20 seconds, remembering to stir halfway through, until the butter has melted.
  • In a bowl, sift together flour, ginger, and allspice, then stir in sugar. Add the milk mixture to the flour mixture and combine. Stir in pears, then spoon the mixture into a 6cm-deep, 8-cup-capacity, microwave-safe dish. Use a spatula to level the top.
  • Prepare the sauce by combining cornflour and sugar in a heatproof jug. Slowly whisk in the boiling water and golden syrup until smooth. Serve the sauce immediately after cooking to enjoy its deliciousness to the fullest.
  • Drizzle sauce over the back of a large metal spoon to completely cover the pudding batter. Place the dish on an upside-down microwave-safe plate. Microwave, uncovered, on MEDIUM (50%) for 12 to 14 minutes or until a skewer inserted into the edge of the pudding comes out clean. Let it stand for 1 minute, then sprinkle icing sugar on top. Add a scoop of vanilla ice cream and drizzle with golden syrup. Serve right away.
