Home-Cured Pancetta

Create homemade pancetta by curing pork belly with spices for 2 weeks in the fridge.
Ingredients:
  • 2 tablespoons red wine
  • 2 cloves garlic, chopped
  • 5 whole allspice berries
  • 4 juniper berries
  • 3 whole cloves
  • 1.5 teaspoons whole black peppercorns
  • 1 teaspoon fennel seeds
  • 0.5 teaspoon whole white peppercorns
  • 0.5 teaspoon red pepper flakes
  • 2.5 tablespoons salt
  • 0.5 teaspoon Prague Powder #2
  • 0.25 teaspoon freshly grated nutmeg
  • 2 pounds pork belly
Instructions:
  • Mix together the wine and garlic, and let it sit for a bit.
  • Grind allspice berries, juniper berries, cloves, black peppercorns, fennel seeds, white peppercorns, and red pepper flakes until fine. Mix in salt, Prague powder, and nutmeg until well combined.
  • Place the pork belly in a glass or ceramic dish and generously coat it with the spice mixture. Pour the wine evenly over the pork. Cover the dish with a wire rack and a large piece of muslin, ensuring the muslin doesn't touch the pork by placing the rack in between.
  • Allow the pancetta to mature in the refrigerator for a savory 2 weeks. Then, thinly slice and incorporate it into your preferred dish, or pan fry to a crispy delight similar to bacon.
