Indulge in spicy salami and shrimp noodles bursting with flavor and herbs for a satisfying Saturday night meal.
Ingredients:
  • 50 ml soy sauce
  • 100mL Shaoxing wine
  • 50g dried shrimp, soaking in hot water
  • 20.00 gm caster sugar
  • 3 dried chillies
  • 3 shallots
  • 6 cloves garlic
  • 50g ginger
  • 150g DON® White Hungarian Salami
  • 250ml canola oil
  • 250g Vermicelli noodles
  • 200g various mushrooms
  • ¼ bunch coriander
  • ¼ bunch spring onion
Instructions:
  • Cube the salami and steep in hot water to enhance the flavor, then set aside.
  • Mince shallots, garlic, and chilies finely or process in a food processor. Drain shrimp from hot water and crush using a mortar and pestle.
  • In a wok over medium heat, sauté garlic, shallots, and ginger in oil until they turn golden brown, stirring constantly.
  • Combine the salami, shrimp, and chili in a bowl after draining the water.
  • Take the garlic, shallots, and ginger off the stove, and pour the oil into a bowl. Return the oil to the pan and add the salami, shrimp, and chilies, stirring constantly for five minutes.
  • After 5 minutes, toss in salami, water, and caster sugar. Mix in Shaoxing wine, simmer for 30 minutes, stirring occasionally. Add soy sauce after 25 minutes and stir.
  • Fill a medium pot with water and bring it to a boil. Meanwhile, heat a medium frying pan on the stove.
  • In a hot pan, sauté mushrooms until golden brown. Cook noodles in boiling water for 1-2 minutes.
  • After draining the noodles, combine them with the mushrooms. Pour a cup of XO sauce over the mixture, stir well, and garnish with fresh coriander and spring onions.
