Quick and easy Sesame Noodle Salad: Thin noodles dressed in a flavorful sesame, honey, soy sauce.
Ingredients:
  • Honey Soy Dressing:
  • 1/4 cup extra virgin olive oil or vegetable oil
  • 3 Tbsp dark sesame oil
  • 1/2 teaspoon crushed dried red pepper or chili powder (optional)
  • 3 Tbsp honey
  • 2 Tbsp soy sauce (less if using tamari which is more concentrated than soy sauce)
  • Salad:
  • 12 ounces of vermicelli, thin spaghetti, or angel hair pasta
  • Salt
  • 2/3 cup coarsely chopped cilantro
  • 1/3 cup chopped roasted salted peanuts
  • 1/3 cup thinly sliced green onions
  • 1/2 cup diced red bell pepper
  • 1 Tbsp toasted sesame seeds
Instructions:
  • Make the dressing: Combine the dressing ingredients in a small saucepan and bring to a boil before removing from heat.
  • Prepare the pasta: Boil a large pot of salted water (1 Tbsp salt per 2 quarts of water). Cook the pasta until al dente following package instructions. Drain the pasta.
  • Coat cooked pasta in dressing and refrigerate: Combine the cooked pasta and the dressing in a large bowl, ensuring the pasta is fully coated. Cover and refrigerate for several hours.
  • Just before serving, fold in the vibrant flavors of cilantro, crunchy peanuts, fresh green onions, and crisp bell pepper. Top off with a sprinkle of toasted sesame seeds for the finishing touch.
