Crispy fried potatoes with onions and peppers - boil, fry, enjoy!
Ingredients:
  • 4 red potatoes
  • 3 tablespoons olive oil, divided
  • 1 onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 teaspoon salt
  • 0.75 teaspoon paprika
  • 0.25 teaspoon ground black pepper
  • 0.25 cup chopped fresh parsley
Instructions:
  • Boil salted water in a large pot. Cook potatoes until tender but firm for about 15 minutes. Drain, cool, and cube into 1/2-inch pieces.
  • In a skillet, heat 1 tablespoon of oil over medium-high heat. Add the onion and green pepper and sauté until they are soft, stirring occasionally for around 5 minutes. Transfer the mixture to a plate and set it aside.
  • Heat the remaining 2 tablespoons of oil in a skillet over medium-high heat. Add potato cubes, along with salt, paprika, and black pepper. Cook, stirring occasionally, until the potatoes are beautifully browned, about 10 minutes.
  • Add the onion-green pepper mix and parsley into the pan. Allow the flavors to meld for one more minute. Serve the delicious dish piping hot.
