Delicious homemade chicken stock infused with aromatic vegetables and spices, perfect for enhancing soups, sauces, and various dishes.
Ingredients:
  • 1 pound chicken parts
  • 1 large onion, quartered
  • 3 stalks celery ribs with leaves, cut into 1-inch pieces
  • 1 large carrot, cut into 1-inch chunks
  • 1.5 teaspoons salt
  • 3 whole cloves
  • 6 cups water
  • 0.25 cup cold water
Instructions:
  • In a large soup pot or Dutch oven, combine chicken parts, onion, celery, carrot, salt, and cloves with 6 cups of water. Bring to a boil, then cover and simmer for 1 hour.
  • Strain the stock and skim off any fat from the surface before continuing.
  • Prepare the consomme: Separate egg white and yolk, reserving the shell. Mix the egg white, crushed shell, and 1/4 cup cold water. Pour into the strained stock, bringing it to a boil. Let it sit off the heat for 5 minutes. Strain through cheesecloth-lined sieve once more.
