Spice up mealtime with this hearty Southwest-style chicken tortilla soup - a flavorful favorite packed with tender chicken, diced tomatoes, and zesty seasonings. It's a dish that will have your guests coming back for more!
Ingredients:
  • 1 cup chopped onion
  • 3 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
  • 1 envelope taco seasoning
  • 1.5 pounds skinless, boneless chicken breast meat - cubed
  • 0.25 cup cold water
  • 0.25 cup shredded Mexican cheese blend
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • In a large saucepan over medium heat, bring together onion, chicken broth, tomatoes, and taco seasoning until it reaches a boil. Add chicken, cover, and simmer on low heat until the chicken is no longer pink, about 4 to 6 minutes. In a small bowl, whisk together cornstarch and water until smooth, then gradually stir into the soup.
  • Heat soup over medium-high heat until boiling; simmer and stir occasionally until it thickens, approximately 1 minute. Finish by garnishing with Mexican cheese and fresh cilantro.
